Tiger Rolls Dutch Oven Buns

Dutch Oven recipe for Tiger Buns

 

 dough:

500 g of wheat flour
  10 grams of dry yeast
  20 grams of salt
275 g water, lukewarm
75 grams of butter, softened
    Tiger paste:
75 grams of rice flour
65 grams of water, lukewarm
  2 grams of dry yeast
  2 grams of sugar
  4 g of sunflower oil

Jalapeno Cheese Bacon Biscuits, how to Video Recipe from littleGasthaus



Ingredients 10-12 biscuits
1 1/3 cup (175g) all-purpose flour   1/4 cup (45g) polenta or fine milled corn meal2 tablespoons (30g) sugar2 teaspoons baking powder1 teaspoon baking soda1/2 teaspoon salt    pinch cayenne pepper1 1/2 cup (170g) shredded cheese2 teaspoon diced jalapeno ( + – to taste)3/4 cup heavy cream (200ml) plus little for brushing
preheat oven to 425°F (220°C). in large bowl, whisk together the flour, corn meal, salt ,sugar, cayenne, baking soda and baking powder. Stir in the cheese, bacon bits, and diced jalapeno.
Mix well. Pour the cream in and gently bring together the ingredients.
Knead the dough just a few times, you just want it to come together. Do not kill it.
Bring the dough on the table, about 1 inch thick, use a biscuit cutter or a juice glass to punch round biscuit shapes.
Use a sheet of baking paper, place the biscuit an the sheet and brush with cream.
Bake at 425°F (220°C) for 12 – 15 minutes or until golden

BBQ Gypsy sauce for Schnitzel, Pork, German Ziegeuner Sauce




Recipe Zigeuner Sauce 

  1 red bell pepper,
  1 green pepper,
  1 onion,
  2 tablespoons flour,
  1 large tablespoon butter,
  1 tablespoon brown sugar,
  1 tbsp. jalapenos,
  1 teaspoon Paprika powder,
  2 cloves garlic ,
  2 cups chicken broth,
100 grams Catsup,
  20 grams tomato paste, Cook butter frothy, then fry the onions translucent, then add the flour, the whole mix well. This is important to give the right consistency of the finished sauce. Ad the rest of the ingredients and bring to a boil, reduce temperature and simmer for about 15 minutes or until the peppers are softly .

from leftover bread, Knodel Bavarian Style



Ingredients


5 old buns or white bead
10 oz. lukewarm milk
1 sm. onion
10 g. butter
Salt water (enough to cover the Knödel)
Salt
1 egg
2 tbsp. all purpose Flower
1 tbsp.. parsley
Directions


Slice buns fine; add salt and pour warm milk over. Cut the onion fine and sauté in the butter
Pour over the cut up buns. Add eggs flower and parsley ; mix all ingredients well with hands. Form a dumpling, rolling them in hands until round and firm and holding together. Simmer the dumplings in salt water. Remove dumplings and serve them on a platter with veal, pork, beef or poultry.

4 egg yolks, 120 Gr. Sugar, 1 pinch salt, 2 tablespoons warm water, beat until mixture is light and foamy. Beat 4 egg whites until stiff, Sift 80 gr flour into mass, Stir in, stir in beaten egg whites, Pour batter into baking pans and at 200 ° C - 220 ° C. Bake for 20 minutes.

Recipe Filling Twinkies 2 1/2 Cups


1/2 cup light corn syrup
3/4 cup sugar
1/4 cop water
1/8 TS salt
2 egg whites room temperature
1/4 TS cream of tartar
1 1/2 TS pure vanilla extract
Stir together the sugar, corn syrup, water and salt in a small saucepan. Bring to a boil, keep stirring. until the mass reaches 240 ° F check with a suitable thermometer.

3 1/2 cup flour,
2 tablespoons sugar,
1 tablespoon salt,
1 teaspoon baking soda,
1 tablespoon baking powder,
1/4 cup melted margarine,
1/2 cup vegetable oil,
1 cup buttermilk

Mutzbraten , east German traditional pork spit


"Mutzbraten" are pieces of pork meat ,spiced after a special recipe and slowly roasted over a birch fire. Bread and Sauerkraut

Contents materials / preparation.

3 Cup water
2 oz salt
2 Ts marjoram
1/2 Ts thyme
1 Ts ground pepper
2 onion finely cut

Marinate over night.
Seal meat at 350°F 1 hour use birch wood for authentic taste
wrap in foil 1 hour, let temperature slowly drop to 250°F

Dough
2 small bags dry yeast
1 tablespoon sugar
1 teaspoon salt
1/3 cup shortening
2 + 1 eggs
4 cup bread flower
1 cup warm milk

for cooking
1 gallon boiling water
3 tablespoon sugar
put the yeast into the warm milk, lat stand till milk gets foamy, mix
