Smoked pork knuckle in my Restaurant Smoker



Recipe:

Sauerkraut

Onion

Bacon bits

Black Pepper, Salt



Pig Legs

Brine: per 2 legs

1 chopped onion,

4 cloves of garlic,

1 tsp thyme,

1 tsp rosemary,

2 tsp black pepper,

1 tsp cumin,

2 bay leaves,

6 allspice berries coarsely ground 1/4 tsp,

3 tsp salt,

3 teaspoon brown sugar,

17 oz water

cure for about 24 hours
